Based on the video “Sugar: Hiding in Plain Sight” there are many ways in which sugar is present within our daily food intake, often without us knowing. Due to the various aliases that sugar has including high fructose corn syrup, sucrose, maltose and about 53 other nomenclatures, these aliases make it difficult to avoid overconsumption of sugar. Although sugar/glucose provides vital energy reserves to the body, excessive glucose can cause an abundance of fat to accumulate due to the liver’s inability to breakdown and process the extra fat (Robert Lustig). Fatty liver or steatosis is a result of excess sugar and alcohol consumption. Steatosis can cause inflammation, scarring and hardening of the liver. This disease is often linked to diabetes, obesity, and alcoholics (Better Health Channel).
Before viewing this video, I had a well-balanced dinner of mushroom rice with lima beans, broccoli, and baked trout with steamed peppers, onions. According to (Lindberg, S.). Trout has 0g of sugar or carbohydrates, broccoli has around 1.7g, while bell peppers and onions have a combined sugar content of approximately 9.0g of sugar, and rice with 158g per cup. For an estimated 168.7g of sugar consumed from my dinner alone.
As discussed previously, fatty liver is a disease associated with increased sugar intake by eating a well-balanced diet and can be prevented by limiting sugar intake, physical activity and limited alcohol consumption.
